The Farm

Cucchiara farm is run by brothers Salvatore and Liborio, and by Salvatore’s son Baldo who has been passionately dedicated to cheesemaking for six years now. For Baldo, the goal is to carry on a centuries-old tradition that goes back to his great grandfather, Don Turiddu Cucchiara, who raised 100 sheep in this area of Trapani in the first half of last century.

His three sons and daughter continued his activity, slowly building up to a flock of 250 sheep and for 80 years the family grazed their animals on rented land. Then in 1990 they purchased the land and started organic production on 15 hectares. Today Liborio manages sales while Salvatore manages production, with assistance from Baldo. They now have 900 Valle del Belice sheep and the milk is used to product Belice Vastedda (Slow Food Presidium) and Pecorino Siciliano PDO (protected denomination of origin): the two PDO cheeses from the Trapani region. The lamb meat is excellent and it is possible to purchase it from September until March.
